Baked Mushrooms, Nuts & Garlic Starter
a.k.a. Summer Snails

Peggy Bryant's Summer Snails are a vegetarian starter:-
mushrooms, nuts, garlic, breadcrumbs and butter or oil, baked in individual ramekins.
INGREDIENTS
- 125 gm Fresh breadcrumbs (do NOT use ready-made)
- 125 gm Finely chopped mushrooms
- 60 gm Chopped mixed nuts
- 125 gm Melted butter or olive oil
- 6-8 Cloves garlic - pressed to paste and mixed with the butter/oil
- 3 dozen 15 mm Cubes of white bread
- Salt and black pepper to taste
PREPARATION
Thoroughly mix the breadcrumbs, nuts, mushrooms, salt and pepper (you might do this by whizzing the mushrooms, bread, salt and pepper in a blender and adding the ready-chopped nuts at the last moment so they're not rechopped too small) and divide equally into 8 small or 6 larger ramekins. Smooth the top of each flat and garnish with 4-6 bread cubes. Pour one eighth of the garlic/butter/oil mixture over the contents of each ramekin and bake at 180°C for 20 minutes. Serve hot as a starter.
